Pumpkin Spice Chocolate Chip Muffins

Makes 12

1 cup pure organic pumpkin

2 egg whites

½ cup organic coconut sugar

½ cup unsweetened applesauce

¼ cup olivina

2 tbsp hot water

1 tsp baking soda

1.5 cups old fashioned oats, ground

½ cup vanilla protein powder (I used vanilla Isapro by Isagenix)

1 tsp salt

1 tsp baking powder

2 tsp pumpkin pie spice

1/8 tsp nutmeg

¼ cup mini dark chocolate chips (the mini ones go further!)

 

 

•    Preheat oven to 375 degrees. 

•    Mix applesauce, olivina and coconut sugar together

•    Blend in egg whites and pumpkin

•    Dissolve baking soda in hot water and add

•    Combine dry ingredients and stir into other mixture

•    Add chocolate chips

 

Bake for 20 mins or until toothpick comes out clean ~ ENJOY!
