Dynamite Bowl

Ingredients

 

8 Cups lettuce (any type, but mixed baby greens are nice)

2 Cups Cauliflower Rice

1 Cup pea shoots

1 Cup sliced cucumber

1 Medium avocado

¼ Cup Pickled ginger

1 Cup Imitation crab (can use real crab)

1 pound Prawns, cooked

¼ Cup Rice vinegar

2 Tbsp low sodium soy sauce

1 tsp Sesame oil

Wasabi paste to taste

2 Tbsp roasted sesame seeds

 

Directions

 

1. Divide the lettuce between 4 bowls

2. Add the cauliflower rice, pea shoots, cucumber, avocado, and pickled ginger

3. Add the crab and the cooked prawns

4. In a small bowl, whisk together the rice vinegar, soy sauce, sesame oil, and wasabi paste

4. Sprinkle roasted sesame seeds over the bowls

5. Drizzle dressing over each bowl
