Chocolate Pumpkin Protein Bars

Makes 20 Bars

2 cups oat flour (old fashioned oats, ground in blender)

4 scoops Isagenix vanilla Isapro

1/2 cup unsweetened cocoa powder

2 tsp cinnamon

1tsp pumpkin pie spice

1tsp baking powder

 tsp baking soda

½ tsp salt

1tbsp organic vanilla extract

½ cup unsweetened applesauce

½ cup liquid egg whites

28 oz can pure pumpkin

½ cup unsweetened almond milk

½ cup chopped walnuts

¼ cup mini dark chocolate chips (optional) Preheat oven to 350 degrees. 

 

Spray a 9 x 13” glass dish with olive oil, or rub with coconut oil to prevent sticking. Mix all dry ingredients together.  In a separate bowl, mix wet ingredients and then add to the dry.  Stir until combined and then add the walnuts and optional chocolate chips.

 

Bake in oven for 20-25 mins or until toothpick comes out clean. Best served warm and eaten with a fork!  Moist and oh so yummy!!!
