Cherry Pistachio Protein Balls

Ingredients

 

1 Cup Large flake oats

1 Cup Puffed quinoa

1 Cup Shredded, Unsweetened coconut

4 Scoops Vanilla Protein powder (we love Isagenix IsaPro)

¼ Cup Pistachios, chopped small

¼ Cup Dried cherries, chopped small

¼ Cup Almond butter

¼ Cup Coconut oil, melted

½ Cup Unsweetened Almond milk

2 Tbsp Dark Chocolate chips melted with 1 tsp coconut oil

 

Directions

 

1. In a large bowl, mix oats, puffed quinoa, coconut, protein powder, pistachios and cherries

2. Mix in almond butter, coconut oil and almond milk

3. Form into balls and place on parchment lined cookie sheet

4. Place in freezer to firm up

5. Dip each ball in the melted chocolate chips

 

Store in sealed container in fridge or freezer
